Jeffrey Opoku

Ghana

Hello, I'm Jeffrey! I am a sustainability advocate from Ghana, specialising in innovation and transition management. My focus areas include climate adaptation, food systems, and sustainable education. As a co-founder of Sustainability Week Ghana, affiliated with Sustainability Week International, I lead local climate activities and engage university students in becoming sustainability champions. Currently, I spearhead the Education for Adaptation Accelerator (e4aa) program, aiming to transform local schools in Ghana into green institutions. Within e4aa, our school food initiative promotes real food system education in curricula, assists school cooks in redesigning school meal plans, and features plant-based meal options for children. We also collaborate with local food heroes like market women, incorporating their insights into food system education for Ghanaian children. Our community collaboration with market women for the school food program earned the school food program a recognition at the 2023 World Food Forum. My primary goal in the food system landscape is to enhance nutrition in local schools and support integrating food system education into the national education curriculum to drive education for sustainable development.
